Sidr honey comes from bees feeding on the blossom of the Sidr tree — ber, or jujube — growing wild in the mountain valleys of Yemen. The tree flowers for only a few weeks a year. One harvest, no second crop, no irrigation, no way to farm it at scale. Yemeni Sidr is the grade collectors ask for by name.

What it’s actually like

Thick enough to hold its shape on a spoon. Dark amber running to caramel. A deep, buttery, almost malted finish with none of the sharp sugary edge of commercial honey. Taken by the spoon, traditionally — this is not a honey you cook with.
